What to eat

Valle sits in cool pine country, and the food leans that way: trout, hearty highland cooking, and blue-corn masa. The regional plate to seek out is trucha, farmed rainbow trout, grilled or fried and served whole. Blue-corn quesadillas and tlacoyos off the comal are the everyday staple, filled with cheese, squash blossom or beans. In the cooler months, barbacoa on weekend mornings is the local ritual.

Where to eat it

  • The municipal market is the honest, cheap option: fondas serving trout, quesadillas and menú del día for a small fraction of lakefront prices. Best for breakfast and lunch.
  • The malecón restaurants trade on the lake view and price accordingly. Fine for a relaxed meal, but you are paying for the setting.
  • Uphill family spots around the centro do the same regional food, better value, and are where locals actually eat.
